Oh just look at my beloved. This photo was taken by my adored brother, Matthew (the one who leaves rude comments on this blog and thinks it's funny!) on Christmas Day 2006 (I think. It was a truly wonderful Christmas I remember that much). Anth had taken over the kitchen and as you can see, was Mr Ultra Organised.
Now there is a reason for this post just as there was a reason why Anth had commandeered the kitchen. Yes, my hopeless cooking skills. I hate cooking. Big time. I do do most of the cooking though, but Anth will do some at the weekend. I even have trained Lucy to knock up a Tuna Pasta so I can get away with one less meal to do. Oh and Alice will do the odd baked potato if asked too.
I like to know when I don't have to cook that evening so I can revel in that wonderful feeling all day. I think what I hate most is the standing and stirring so I try and do as many one pot dishes (like casseroles) as possible even though they take quite a long time to prepare. It means that once they go into the oven I can forget about it. I breathe a sigh of relief and get back to something more interesting. And yes, I sometimes do literally forget about it, and the family have to make the best of a rather over-cooked supper. Poor things. I do feel guilty, especially about the lack of baking, but I try not to dwell on that.
So, I'm asking for your help. Please could you share your 'fool-proof' recipes. Ones that are easy or rather don't need a lot of fiddling and stirring.
